Whether it’s a croissant, a sandwich or dinner leftovers, we all throw away food from time to time. But as annoying as food waste may be in our everyday lives, it adds up alarmingly in bakeries and restaurants, with more than 200,000 tonnes of perfectly good food ending up in the bin every year. This is because most businesses find it difficult to adapt their supply to current demand.
More targeted production, less waste
This is where GoNina comes in: the Zurich-based start-up uses artificial intelligence to provide small and medium-sized restaurants and bakeries with accurate demand forecasts, allowing them to better adapt the production of their dishes and baked goods to actual demand. By analysing sales data, weather forecasts, local events and seasonal trends, for example, GoNina optimises businesses’ ability to plan their supply – thereby reducing overproduction and resulting food waste. If, after all of this, there is still surplus food, an app is on hand that allows suppliers to pass on that food to consumers at reduced prices. The concept is currently being piloted in the greater Zurich area with the support of the Migros Pioneer Fund.

GoNina aims to promote sustainability in the food industry by effectively reducing food waste. That’s because less waste means a more resource-efficient economy and a lower environmental impact – in short, sustainability that pays off for everyone.
